Usage:
To make pilau rice, a fragrant rice dish with whole spices, heat oil or ghee in a large pot and fry sliced onion until golden. Add cinnamon stick, cardamom pods, cloves, bay leaf and salt and cook for a few minutes. Add basmati rice and water and bring to a boil. Lower the heat and cover the pot with a tight lid and cook for 15 minutes or until the rice is cooked and fluffy.
To make korma, a creamy curry with meat or vegetables, heat oil in a pan and fry chopped onion until soft. Add ginger-garlic paste, salt, coriander powder, cumin powder, turmeric powder and bay leaf and cook for a few minutes. Add chicken pieces or mixed vegetables and cook until browned. Add water or stock and bring to a boil. Lower the heat and simmer until the chicken or vegetables are cooked. Add cream or coconut milk and simmer for a few more minutes. Garnish with chopped coriander leaves and serve with naan bread or rice.
To make apple pie, a classic dessert with spiced apples and pastry crust, preheat oven to 180°C and lightly grease a pie dish. In a large bowl, toss sliced apples with lemon juice, sugar, cinnamon, nutmeg and cloves. In another bowl, mix flour, salt and butter with your fingers until crumbly. Add water gradually and knead into a smooth dough. Divide the dough into two portions and roll out one portion on a floured surface. Place it over the pie dish and press it gently to fit the dish. Spoon the apple mixture over the crust and spread it evenly. Roll out the remaining dough and place it over the filling. Press the edges to seal and cut some slits on the top crust. Brush some milk over the crust and sprinkle some sugar if desired. Bake for 25 to 30 minutes or until golden.
